Sticky Pork Noodle Bowl

She's gone and done it again. Holly Nicholls, aka The Wandering Matilda, has brought another mouth watering dish to the table and she promises us that it's super duper easy to make. We like that.


Asian food is just the bomb-diggity in general, but sometimes it requires a little extra effort (slicing, dicing, zesting, seasoning, marinating and all that jazz) but this one is perfect for the twenty-something human because you can use whatever veggies are hiding out in your fridge and slap it together in time to catch the end of The Bachelorette.


Who doesn't love a good noodle bowl? Dinner is sorted!



Sticky Pork Noodle Bowl


1/4 cup light soy sauce
1/4 cup mirin
1 1/2tbs apple cider vinegar
2tbs honey
4 cloves of garlic, crushed
2tbs finely chopped ginger
2tsp sesame seeds
1tsp cayenne pepper
1tsp salt
1 egg
500g pork mince
Handful of soba noodles, shiitake mushrooms, asparagus and edamame – or whatever you want really.




Preheat your oven to 180 and get a medium, deep oven roof dish ready. In a cup, mix together the soy sauce, mirin, vinegar and honey then leave aside. In separate bowl, add the garlic, ginger, sesame seeds, cayenne pepper, salt, egg and pork mince.


Using your hands, mush the mixture together then roll into little golf balls. Place in your oven proof dish then drizzle with olive oil.




Place in the oven for 10 minutes then remove and turn up the heat to 200. Pour over the prepared soy sauce and cook for a further 15. Shake around then cook for a further 5 minutes.


In the meantime, cook the soba noodles as per the packet instructions and heat a fry pan. Drizzle slightly with olive oil and add the mushrooms. After 5 minutes, add the asparagus and edamame and heat through for 2 minutes.
