Zucchini and chocolate got it on and made these bad boys.

One of life’s eternal struggles is that of healthy food versus food that actually tastes good (which is usually stuff that’s covered in butter and then deep fried in oil). In my life it’s never a true battle because the later always wins.

Give me a piece of celery and a doughnut and I’m always going for the doughnut. Lock me in a room with a bunch of kale and a box of kit-kats and you’ll be sure to find me lying next to an empty box with a chocolate covered face groaning, “what the fuck is that green stuff over there, is that supposed to be spinach or something?”.

So, as a notorious gobble-guts with a sweet tooth it was very exciting for me to discover Skinny Nosh’s healthy zucchini and chocolate muffins. Now, I was skeptical at first. I thought it was going to taste like boogers. Alas, I was assured that I would enjoy this treat and so too would my waistline and you know what? I bloody did.

What you'll need:

  • 1 ¼ cup self raising flour

  • ½ cup sugar

  • ¼ cup + 2 tbs cocoa powder

  • Sprinkle of salt

  • 1 grated zucchini, peeled

  • ½ cup apple sauce

  • 1/3 cup oil

  • ¼ cup plain or Greek yoghurt

  • 2 tsp vanilla essence

  • ½ cup choc chips (optional)

How to cook:

  1. Preheat oven to 180°c and grease a 12 hole muffin tray, or fill with 12 cupcake cases

  2. In a large bowl, combine flour, sugar, cocoa and salt.

  3. In a separate bowl, combine wet ingredients. Then pour into dry ingredients and mix very well until combined. Stir through choc chips

  4. Spoon into muffin tray and bake for 20 minutes or until a toothpick inserted into the middle comes out clean.

  5. Stuff your face with as many as you like because THEY ARE GOOD FOR YOU!
